By bbrown, on March 10th, 2011% The grillades are 2 3-4 oz mini-steaks cut from the “mock” or chuck tender, marinated overnight, seared & then slow cooked in a spicy gravy made from the cajun trinity–bell pepper, onion, & celery–a medium roux, & a little beer and chicken stock. This is ladled over a big helping of our famous cheese grits, & served with your choice of side veggie.

The “Grillades” are the trendy bistro steak known as the shoulder or chuck tender, marinated overnight in India Pale Ale and assorted spices. Then slow cooked in a medium roux, like a smothered pork chop, until nearly falling apart.
